A kilometre equals about 2 187 Cubits. So just gather distance, and convert it.
Now on a more serious note, you could do daily quests which if i'm calculating right is 1050 a week. And mine too! there's occasionally 'cubit explosions' in which a single block drops many cubits. And while that isn't too often, while it happens, you do get lots get cubits too. It's not the fastest way, but i think it's the one that requires the least effort. You could also sell the thing you mine which allows for more cubits to be made.
